Peanut tofu broccoli curry

Another recipe that has deviated significantly from the original

Ingredients

  • 1 package firm tofu. 1/2 inch cubes. Browned in a non stick pan with no oil
  • 1 can light coconut milk
  • 1/4 cup peanut butter
  • 2 teaspoons low sodium soy sauce
  • 2 teaspoons or so red curry paste
  • 2 teaspoons of diced ginger
  • 3 heads of broccoli, chopped
  • 2 red bell peppers, chopped
  • Mix coconut milk, peanut butter, soy sauce, curry paste, and ginger in a 4-6 quart pot and heat until peanut butter is dissolved
  • Stir in the cooked tofu, chopped broccoli, and chopped bell pepper. Cook, stirring frequently, until the broccoli and the bell peppers are tender crisp.

Serve as is, or over cauliflower rice. Some sriracha sauce would be a nice touch also.
