Yesterday I met up with one of my local music pals, who happens to be a year round gardener. He invited me to pick some fresh tomatoes, garlic, and basil. A quick stop at the grocery store snd we now have tomato cobbler! It’s like you think. But savory instead of sweet (tomato is a fruit, btw).
I’ve attached photos with some mozzarella on top of the quickly cooked tomatoes, then after adding the buttermilk biscuits, and then at the end.
I know what’s for breakfast tomorrow am. Probably lunch and dinner too.

Starting recipe here. Of course I had to futz with it. I didn’t have any cherry tomatoes so just cubed some larger tomatoes. Eliminated the butter. Added more buttermilk. No salt added. No sugar added.
