We lived in South Louisiana for quite a time. I learned a lot about Cajun cooking from public TV in Baton Rouge, the cooks in the cafeteria at work, and Chef Paul Prudhomme’s cookbook (which I still have).
I also learned that South Louisiana isn’t the most healthy place on earth.
So, I made today my version of Chef Paul’s Red beans and Rice. No ham hocks. No sausage. No white rice. But still pretty good.
